This sparkling wine is made from 80% Arien grapes and 20% Chardonnay. The Arien grapes are grown in the La Mancha region of Spain, where the first fermentation takes place under cool temperatures to make a ‘base’ wine that is fresh and fruity. After the wine is stabilized, it is shipped to the Languedoc, where the second fermentation occurs under pressure – using specific yeasts specially selected for sparkling wine. After the second fermentation, the wines are bottled at ‘4’ atmospheres.

100% Müller-Thurgau from family estate-owned vineyards where rigorous crop thinning and hand-harvesting are the norm. In addition, no systemic pesticides or herbicides are used and there is no irrigation in the vineyards. The soils here are a mix of loess, limestone and red sandstone. The juice undergoes a slow, cool fermentation in stainless steel tanks. This technique helps to retain the wine’s delicate, primary fruit characteristics, as high temperatures can drive off desirable aromas. Finished in Stainless steel.

100% Chardonnay from Dundee Hills AVA. Certified organic and Biodynamic vineyards, on Jory clay soil. This Chardonnay was bottled un-fined and unfiltered, showcasing a commitment to minimal intervention. The wine is a regional blend from neighboring old vines and the White Walnut Estate. The 2023 vintage saw an abundant and harmonious growing season in the Northwest. After a cool spring, a warm, dry summer created excellent conditions for an accelerated bloom and fruit set.
Subterra 2022 Pinot Noir, Los Olivos District, California

100% Pinot Noir from the Los Olivos district in the Santa Ynez Valley. Grown on sandy clay soils with great drainage. The growing season presented a dry and cool spring with low rainfall, followed by high heat and a significant rain event in late September. This resulted in a lower than average yield but the quality of the Pinot Noir stayed high. This wine saw 9 months in French oak, 20% of which was new. Only 2000 cases were made.
Domaine de la Mordoree 2023 Marselan, Rhone Valley, France

100% Marselan, which is a cross between Grenache and Cabernet Sauvignon. These grapes were grown on sand and clay soil, on a Biodynamic and Demeter Certified organic vineyard. All hand harvested and owned and operated by a Mother and Daughter duo. Only indigenous yeast was used and minimal sulfites were added. Finished with a 20-day maceration period in temperature controlled stainless steel vats. This wine saw no oak aging as to highlight the natural fresh fruit character of this grape.

95% Tempranillo with 5% Viura (a white grape) Artuke is a key pioneer in small-scale, biodynamic winemaking, focusing on fresh, acid-driven Rioja while avoiding traditional classification systems. They have adopted all organic and sustainable farming practices. These grapes were grown on clay and calcareous limestone soil. All hand harvested from average 40 year old bush vines. Goes through 100% whole cluster carbonic maceration and is aged for 5-6 months in concrete tank and softly filtered before bottling.

95% Syrah and 5% Grenache grown on rolled pebbles from the Rhone atop red clay rich in iron soil. Certified organic vineyards that overlook the marshes of Camargue and are cooled by Mediterranean breezes. These grapes were handpicked with ¼ of them whole- cluster and ¾ of the grapes destemmed. Fermentation happened in temperature controlled tanks with delestages to retain the fruit flavors. Half of the wine is aged in concrete tanks and the other half in French oak for 9 months.
Opolo Vineyards 2023 Zinfandel Summit Creek, Paso Robles, California

100% Zinfandel was picked at night to ensure freshness and integrity. The grapes were cold soaked for up to 72 hours, then fermented in stainless steel over a period of 10 to 12 days. The free-run juice was captured separately to create the vast majority of the wine. It was then aged for two months with 30 percent new French and American oak. This blend was returned to oak and matured for an additional eight months prior to bottling. This relatively short aging period was designed to capture bright, fruity flavors that can be enjoyed in their youth.
